Course objectives
Students should be able to correctly interpret any information relating to safety of food and ready to eat food with the topic on catering services in hospitals and nursing centres.
Syllabus
  • Examples of an unsafe food including food supplements
  • Evidence-based outbreaks of foodbrone infection and poisoning
  • Prevention and control of food allergies
  • Control of food quality and safety of foodstuffs intended for particular nutritional uses.
