Abstract
Raw food (syrova strava) je v soucasnosti popularni alter-nativnf zpusob stravovani, ktery ve sve podstate kopiruje principy veganstvf, ale omezeni vyberu potravin vhodnych ke konzumaci je zde rozsireno o vylouceni jejich tepelneho zpracovanf. Clanek je souhrnem dosavadnich poznat-ku o tomto zpiisobu stravovani zejmena se zamefenim na pfednosti i nedostatky s ohledem na skupiny konzumo-vanych potravin a vyvozeni moznych dopadu pro zdravi cloveka vcetne hodnoceni souvisejicich nutricnich rizik.
Abstract (in English)
Raw food is presently a famous alternative dietary lifestyle which derives its principles from veganism, excluding additionally the (thermal) processing of food. The aim of this article is to summarize the knowledge about this topic up to now, to describe its' strenghts and weaknesses regarding certain groups of consumed food and draw the potential consequences of raw food diet on human health with the assessment of related nutritional risks.
