Abstract
The article describes contemporary knowledge on castle kitchens and their management during the Middle Ages and Early Modern History. It then compares this general state of research with the situation on the Rokštejn Castle which has been excavated for more than forty years. It was published as a result of GAČR grant “Reconstruction of Medieval Castle Kitchen Operation in Relation to Waste Management on Rokštejn Castle Example” (registration number GA22-02149S).
