Abstract
Polyfenolické látky ve víně mají významné biologické účinky: a) Antioxidační efekt Bylo klinicky zjištěno, že konzumace červeného vína, vede ke zvýšení krevní hladiny HDL (high density lipids) b) Protirakovinný efekt V roce 1997 zveřejnil tým dr. Pezzuta z illinoiské Univerzity z Chicaga (USA) článek o protirakovinném působení resveratrolu. Bylo zjistěno in vitro i in vivo, že všechny fáze rakovinného procesu byly inhibovány resveratrolem, jehož přítomnost zvyšovala koncentraci enzymu chinon-reduktázy, která metabolicky detoxikuje karcinogeny. Resveratrol také vykazoval protisrážlivý efekt krve a inhiboval aktivitu cyklooxygenázy-1 (COX-1) a hyperoxydáz, navíc u myší, kterým byl podáván karcinogen, též inhiboval rakovinný proces.
Abstract (in English)
Polyfenolic compunds in wine exhibit important biological effects: a) Antioxidation effect It has been clinically proved that consumption of red wine leads to increase in level of HDL (high density lipids)in blood. b) Anticancer effect In 1997 the team of dr. Pezzuto (Illinois University, Chicago, USA) has published an article about anticancer effect of resveratrolu. It has been found in vitro and in vivo, that all stages of the cancer process have been inhibited by resveratrol. Its presence increased concentration of enzyme of quinone-reductase, which metabolically detoxicates carcinogens. Resveratrol also exhibited antiprecipitation effect in blood and inhibited the activity of cyclooxygenase-1 (COX-1) and hyperoxydases. Moreover, mice fed with a carcinogen, resveratrol inhibited the cancer progress.
