The goal of this study was to assess the capabilities of the Enterococcus spp. microorganisms to form a biofilm. The tested isolates of Enterococcus spp. werw acquired from a primary milk production and milk processing plant and from final products. Phenotyping using test tubes was used to determine the values. The capability of forming biofilms was detected in 28 % of Enterococcus spp. strains. There was a higher number of biofilm forming strains of the Enterococcus faecium (33 %) than Enterococcus faecalis (28 %). In isolates in bulk tank samples acquired from farms, higher numbers of biofilm forming strains was found than in isolates acquired from a dairy. In final products (cheese and curd cheese), no isolate has been seen to be able to form biofilms.
