This paper will discuss different methods that restaurants use to express their identity, in what ways they act as symbols of identity, and how they act as social performances of identity. The specific focus is on foreign restaurants in Brno, and how international, Czech and the applicable native culture or cultures of the restaurant itself interacts within the realm of the restaurant. The analysis will cover how restaurants tend to frame and structure symbolic meaning of “us” and “them” in terms of the local versus the presented culture. The collected data will include interviews with owners and staff, restaurant names, the menus and daily menus, and various aesthetic observations. The analysis itself will be focused on Erving Goffman's and Jeffrey Alexander’s works on performance and presentation.
